A classic bittersweet (high in tannin, low in acidity) cider variety, we draw our Harry Masters Jersey apples from local orchards. Expressive of the English terroir, where they were bred to be grown.
Every apple is hand graded and washed. Unlike calvados we ferment and
double distil the entire apple with a gentle water bath clad still. The result
is much more complex and expresses the whole fruit.
Married with a rare cask of chestnut we build layers of vanilla, smoke and aromatic notes of wood and apple. A perfect accompaniment to apple deserts!
Sweet aromas with sour undertones, vanilla, freshly grated apple, hints of stewed apple, cream and cigar boxes.
The taste develops with fresh and juicy apples, delicate spice, cedar, chestnuts, long lasting tannins that become increasingly smoky and cigar tobacco with a balancing sweetness.
