Details of production:
The warm, dry summer months which extended into early autumn provided the ideal ripening conditions for our 2016 fruit. The grapes were harvested at the point of optimum flavour development and fresh minerality. For this wine, we identified nine premium parcels of Sauvignon Blanc from our Awatere Valley vineyards. Each parcel was picked and fermented separately, allowing us to enhance varietal character using carefully selected yeast strains. A long, cool fermentation took place over four weeks, followed by blending, stabilization and filtering prior to bottling.
The Crossings Sauvignon Blanc shows lifted notes of gooseberry and passion fruit, underpinned with citrus notes. The palate is full with pure fruit flavours, yet balanced with a persistent, crisp mineral finish.
How to serve:
Enjoy with both fresh and cooked seafood dishes such as oysters and prawns or freshly crumbed fish fillets, accompanied by a Caesar salad with a tangy dressing.
